We always prepare this recipe during the holidays......yum !
You can use the canned yams drain, or fresh boiled, drained yams.....whichever you prefer. ;)
Sweet Potato Casserole
Ingredients ---
2 or 3 cans sweet potatoes, drained, or three cups, fresh, boiled, drained.
One cup sugar
One stick melted butter
Two eggs
One tsp. Vanilla
Mix ingredients well and place in butter greased casserole dish.
Topping ---
2 / 3 cup flour
2/ 3 cup softened butter
2/ 3 cup milk
2 cups Brown sugar
1 + 1/ 2 cup pecans broken pieces
Mix topping ingredients well and spoon over potato casserole mixture. Bake at 325 degrees for 45 to 50 minutes, until top has formed a soft crust and casserole is pretty firm. Place pecans on top for a pretty casserole. ;)
If top starts getting brown too quickly, lower oven temp by 25 degrees, and place foil on top for part of the baking process....
You can sprinkle a few mini marshmallows on top of the casserole five minutes before you remove very hot from oven......melty marshmallows !
Serve this casserole as side on dinner table with other veggies, and your main dish, ham, or turkey.......yum yum !
