caramel corn.....

I like to make this as a lighter snack during the winter...

Caramel Corn

2 c. Brown Sugar
1/2 c. white Corn syrup
2 sticks margarine
1 tsp. salt
1/2 tsp. baking soda
1 tsp. vanilla
6 quarts of pop corn (or 6 bags of microwaved pop corn)

Pop corn and place into a large deep set baking dish for oven. Set aside.

Combine brown sugar, syrup, margarine, and salt. Heat to a rolling boil. Remove from heat. Add baking soda and vanilla. Pour over popped corn and stir in the baking dish. Bake at 250 degrees for 45 minutes, stir every 15 minutes. Do not burn yourself!

I have created this caramel corn for years and it is my Grandma's recipe, but I had to change this up a bit ,because it works differently with different ovens...it can scorch easily on the bottom of the baking dish so keep checking it as you stir with a larger sized spoon every 15 minutes...it is time consuming so if you have extra free time you can enjoy creating caramel corn!....haha!

after the caramel corn cools, I like to scoop it up with the spoon and place into plastic storage containers and/or plastic storage bags/Ziploc bags...

just a lighter snack for winter.
