pumpkin bars.....

I whipped up a batch of pumpkin bars today...I enjoy baking these.A favorite of mine this time of year...Always sift your dry ingredients together with a sifter first.

Pumpkin Bars

2 cups all-purpose flour
1 1/2 cups sugar
2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon pumpkin pie spice
1/4 teaspoon salt or less
4 eggs beaten
1 15-ounce can of pure pumpkin
1 cup of cooking oil
1/2 recipe of cream cheese frosting

1. Preheat oven to 350 degrees. In a bowl stir together the flour, sugar, baking powder, pumpkin pie spice, baking soda, salt. Stir in the eggs, pumpkin, and oil until combined. Spread batter into an ungreased deep set baking pan.

2. Bake for 25-30 minutes or until a toothpick placed into the center comes out clean. Cool in pan after removing from oven. Cool 2 hours. Spread with cream cheese frosting. I place mine into the refrigerator for 2 1/2 hours. Then I make into square bars. This makes them more manageable to enjoy!

USE Half of this recipe to frost your Pumpkin Bars.

Cream Cheese Frosting

1 8-ounce package cream cheese. softened (let set on kitchen counter for an hour to soften)
1/2 cup Butter softened
2 teaspoons Vanilla
5 1/2 to 6 cups of powdered sugar

1.In a large mixing bowl beat the cream cheese, butter, and vanilla with a mixer until light and fluffy (use medium speed) Gradually beat in powdered sugar to reach spreading consistency for pumpkin bars. Store in refrigerator.

I enjoy these with a glass of milk...sometimes on Saturday mornings these are good for breakfast....lol.
